Ingredients
– 4 boneless, skinless chicken thighs (or breasts)
– 2 cups buttermilk
– 1 large egg
– 2 cups all-purpose flour
– 1/2 cup cornstarch
– 1 tablespoon paprika
– 1 tablespoon garlic powder
– 1 teaspoon cayenne pepper
– 1 tablespoon salt
– 1 teaspoon black pepper
– Vegetable oil for frying
– 4 sandwich buns

Instructions
1. In a large bowl, whisk buttermilk, egg, paprika, garlic powder, cayenne, salt, and pepper together.
2. Add chicken pieces, coat well, cover, and marinate in the fridge for at least 4 hours or overnight.
3. In another bowl, mix flour, cornstarch, paprika, garlic powder, salt, and pepper.
4. Remove chicken from marinade, letting excess drip off, and dredge thoroughly in the flour mixture.
5. Heat oil to 325°F (165°C) in a deep skillet or fryer.
6. Fry the chicken pieces for about 6–8 minutes, turning once, until golden brown and crispy.
7. Drain the chicken on a wire rack to keep it crispy.
