Ingredients
– 1 cup (2 sticks) unsalted butter, softened
– 3/4 cup brown sugar, packed
– 1/2 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 tablespoon molasses
– 1 1/2 cups all-purpose flour
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 1/2 teaspoon cinnamon
– 1 1/2 cups quick oats
For the cream filling:
– 1/2 cup (1 stick) unsalted butter, softened
– 1 cup powdered sugar
– 1 teaspoon vanilla extract
– 1 tablespoon heavy cream or milk
Instructions
1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
3. Add eggs, vanilla extract, and molasses. Beat until well combined.
4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add to wet mixture.
5. Stir in oats until evenly mixed.
6. Scoop dough by tablespoons onto prepared baking sheets, spacing 2 inches apart.
7. Bake for 10–12 minutes or until edges are golden brown and centers are set.
8. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
9. While cookies cool, make the cream filling. In a medium bowl, beat butter until smooth.
10. Add powdered sugar, vanilla, and cream. Beat until fluffy and spreadable.
11. Once cookies are completely cool, spread or pipe cream filling onto the flat side of one cookie, then top with another to form a sandwich.
12. Repeat until all pies are assembled. Store in an airtight container.
