This cracker barrel pancake recipe delivers fluffy, golden buttermilk pancakes with buttery crisp edges, just like the ones at the famous restaurant—only better and made fresh at home in minutes!
Ingredients
– 2 cups all-purpose flour (spooned and leveled)
– 2 teaspoons baking soda
– 1 teaspoon salt
– 3 tablespoons granulated sugar
– 2 eggs
– 2 1/3 cups low-fat buttermilk
– Butter (for greasing griddle)
Pancake Mix (for future use):
– 10 cups all-purpose flour
– 1 cup granulated sugar
– 3 tablespoons + 1 teaspoon baking soda
– 5 teaspoons salt
Instructions
1. Preheat your griddle to 350°F. Rub a stick of butter over the hot surface to coat it well.
2. In a medium bowl, whisk together eggs and buttermilk until combined.
3. Add flour, baking soda, salt, and sugar. Whisk gently until just mixed—don’t overdo it. A few small lumps are fine.
4. Let the batter rest for about 5–10 minutes while your griddle stays hot.
5. Use a ½ cup scoop to pour batter onto the buttered griddle.
6. Cook until bubbles begin to pop on the surface and the edges look set—around 2 minutes.
7. Flip and cook for another 1–2 minutes until the pancake is golden brown and fully cooked.
8. Serve immediately with your favorite toppings. Repeat the process, buttering the griddle before each new batch.
To Make Pancake Mix:
1. In a large bowl, combine the mix ingredients.
2. Store in an airtight container for future use.
To Use Pancake Mix:
– Mix 1 cup of pancake mix with 1 egg and 1 cup + 1 tbsp of low-fat buttermilk for 6 pancakes.
– Double the mix and wet ingredients for 12 pancakes.
– Cook using the same method as above.
