Ingredients
– 1 and 1/2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup vegetable oil
– 3/4 cup granulated sugar
– 1 cup plain yogurt (or plant-based yogurt)
– 1 teaspoon vanilla extract
– 1 tablespoon lemon zest (optional)
– 1 cup chopped fresh fruits (berries, mango, pineapple, etc.)
– 1 tablespoon flour (for tossing fruits)
Instructions
1. Preheat oven to 350°F (175°C) and grease a cake pan or line it with parchment paper.
2. In a bowl, sift together the flour, baking powder, baking soda, and salt.
3. In another bowl, whisk the oil, sugar, yogurt, and vanilla extract until smooth.
4. Gradually add dry ingredients to wet ingredients, stirring gently to combine. Do not overmix.
5. Toss the chopped fruits in 1 tablespoon of flour to prevent sinking.
6. Fold the fruits gently into the batter.
7. Pour the batter into the prepared pan and smooth the top.
8. Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.
9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
